Come to Yunnan in Winter to Taste "Niu Sapie"

"Niu Sapie" is a local cuisine in Mengsuo Village, Mengsuo Town, Ximeng Va Autonomous County, Pu'er City, Yunnan Province. Dai people love it very much. In winter, they love eating "Niu Sapie" with rice noodles, letting its bitter, spicy and cool taste break the bleak chill inside.

"Niu Sapie" is a unique food of the Dai people. The main raw materials are tripe, beef tenderloin, beef liver and beef bitter intestine. Roast beef tenderloin, beef liver and beef bitter intestine, then cut them into thin shreds, mix with cooked tripe, add ginger, garlic, pepper, peanuts and other condiments, mix well with boiled and filtered beef intestine water or bile, then dish is ready.

The reason why "Niu Sapie" is special lies in the unique ingredient it uses - something that has been mixed with gastric juice in the cow's stomach, but has not been digested and absorbed. It may sound unbelievable, but it cannot be called "Niu Sapie" without this ingredient. Of course, if you want to persuade yourself to eat this kind of specialty, you must have the courage like the first person to try tomato.
