Pu'er Mojiang: The Aroma of Sausages as the Spring Festival Approaches

As the Spring Festival approaches, the residents of Mojiang Hani Autonomous County in Pu'er City, Yunnan Province, are busy making sausages to welcome the new year. The sausages in Mojiang mainly come in two varieties: pork sausage and tofu sausage. The production process involves mixing and kneading meat or tofu with seasonings such as chili powder, salt, and Sichuan pepper, then stuffing the mixture into casings and drying them for seven to ten days. These sausages are not only a delicious local delicacy but also carry people's best wishes for the new year, making them an indispensable traditional food during the Spring Festival.
