Making moon cakes to promote rural vitalization

Recently, Yunnan Afangniang Agricultural Science and Technology Co., Ltd. and the working team staying at Xinhua Village are organizing the old craftsmen to guide and pass on experience of making traditional moon cakes to the young people.

"There are many special agricultural products in the Xinhua Village, which has rich and diversified food culture. However, they cannot make sound economic benefits because the sales are lagging behind marketing. As a result, we organized the young people in the village to establish Yunnan Afangniang Agricultural Technology Co., Ltd. to promote the development and promote the revitalization of the village." Li Jianyong, a team member staying at the village, said.

"Our company belongs to the village collective economic organization, and mainly purchases and sells agricultural and sideline products. Our company and the team organized the young people to make hand-made moon cakes in the traditional way. On the one hand, we launched the 'Ananduo' green food brand by inheriting the food culture, on the other hand, we also want to take advantage of the Mid Autumn Festival to help the villagers increase their income." In the moon cake workshop, masters are skillful in their actions and cooperate with each other. They roll the dough, wrap the stuffing, press, sprinkle with sesame seeds, and bake the moon cakes one by one. "The raw materials of the moon cakes we make are all from the village, such as eggs, walnut oil and so on." The master introduced while making moon cakes.  

"The last and most important step in moon cake making is baking, which is directly related to the taste and quality. The fire and time of charcoal baking should be well controlled. If the fire is too strong and the time is too long, cakes are easy to be burnt. If the fire is not enough and the time is too short, cakes look white and the inside is not cooked through." Chen Zhiye, who is in charge of charcoal baking, said, "a pot can bake about 20 to 22 moon cakes, and it takes at least 15 minutes."

Why choose traditional charcoal grilling instead of oven? Chen explained: "moon cakes baked with oven taste not as good as the ones baked with charcoal."
