[InKunming--Yunnan]  In A Bite of China, the 2012 Chinese documentary television series, a kind of snack, Jianshui roast bean curd(tofu) was specifically recorded.

Jianshui county in Honghe prefecture actually has many precious things that are worth to be praised.

Roast bean curd was one of these precious things in the county. It could be said that Jianshui tofu stands for a name card of the town.

Almost all people no matter the local habitants in the town or tourists appreciate taste of the Jianshui tofu.

Jianshui locals consider that the good taste of the tofu mainly stems from water which flows from ancient wells of Xijie old town in Jianshui.

Daban well, and Xiaojie well, were built up in the town hundreds of years ago.

Until now, water volumes in the wells are still plentiful. Water quality in the wells is also clear and clean.

From day to night, Jianshui locals would come to fetch water from the ancient wells. Bucket, kettle, bottle have become daily tools for the locals to fetch water.
