Yongping is a county with strong Chinese atmosphere in Yunnan. The delicacies here are featured by flavors in Han and Tang Dynasty.
In the fourth century B.C., horse caravans mounted over tremendous mountains and stride across the turbulent Langcang River. They also crossed the Southwestern Silk Road, which connected India and Myanmar.
With a long history, Yongping was built into a county in 69 A.D.. Beef for the horse caravan was in the size of a hand. It is said that a piece of beef is the lunch for horse drivers. This piece of beef is not only big, but also thick, about one centimeter in hight.
Yongping is also famous for some exquisite dishes related to chicken, such as braised chicken and stew chicken with pawpaw. Dating back to about 1,000 years ago, people living in the border of Yunnan came to Yongping with the recipe, and later it became a famous local dish.
The selection of chicken for cooking is particular, roosters that just start kokoriko or hen before laying eggs. The best time for chicken is nine months to eleven months. This kind of chicken tastes great after being fast stirred and fried.
