Recipe for Yunnan-style stir-fried er-kuai

All materials can be bought at Yunnan local market. If you don't live in Yunnan, don't worry. Some materials can be replaced.

Tips:

1. Er-kuai can be replaced by rice cake (nian gao)

2. Bacon can be replaced by hams or fresh pork or beef

3. Chinese cabbage can be replaced by green vegetables

1. Cut er-kuai into slices;

2. Cut bacon into slices;

3. Cut Chinese cabbages and green onions into sections; chop some Yunnan pickled cabbages;

4. Add 1-2 spoons of oil into a pan and throw bacon slices in it; stir until bacon slices become curly;

5. Get bacons out and add a little more oil; throw into er-kuai slices; turn the heat down and stir evenly;

6. Throw into minced Yunnan pickled cabbages, stir-fried bacon slices and green onion sections;

 

7. Stir evenly and add some dark soy sauce

8. When er-kuai slices turn brown, throw into Chinese cabbages; add 1/2 spoon sugar and salt; stir. Enjoy it! (Editors: Annie Kwok, Minnie Mao)
